Aloo Tikki

Aloo Tikki, also known as aloo tikkia, aloo ki tikki or alu tikki, is a snack originating from the Indian Subcontinent. In Indian, Pakistani, and Bangladeshi preparations, it is made of boiled potato, peas, and various curry species. Aloo means potato in Hindi-Urdu and tikki is a small cutlet or croquette.

About the Recipe

Making aloo tikki at home is a breeze & gets done faster! The stuffed version does not take any longer if you prepare the stuffing while the potatoes are boiling. But it takes a little longer for the patties to stuff and shape.

Firstly, you need to be very careful while boiling the potatoes. You can use a pressure cooker to boil these, but they have to be removed from the water immediately the pressure is released. Otherwise, the potatoes may absorb water and may not attain the tikki shape. Secondly, add corn flour, which should bind the veggies together. The same can be done with bread crumbs, cornflakes, or oats powder too. Lastly, shallow-fry these patties for less oil consumption. Alternatively, you can also deep fry for a better crisp and taste.

Ingredients

  • 3 potato/aloo, boiled & grated
  • 1 chilli, finely chopped
  • 1 tsp ginger garlic paste
  • 1/4 tsp turmeric
  • 1/2 tsp kashmiri red chilli powder
  • 1/2 tsp cumin powder / jeera powder
  • 1/2 tsp aamchur / dry mango powder
  • 1/2 tsp chaat masala
  • 1/2 salt
  • 2 tbsp mint / pudina, chopped
  • 2 tbsp coriander, chopped
  • 2 tbsp corn flour
  • oil, for frying

Instructions

  1. Firstly, in a large mixing bowl, take 3 boiled and grated potatoes. Make sure to pressure cook potatoes for 4-5 whistles and drain off the water as soon as pressure releases.
  2. Add 1 chilli, 1 tsp ginger garlic paste, 1/4 tsp turmeric and 1/2 chilli powder.
  3. Also add 1/2 tsp cumin powder, 1/2 tsp aamchur, 1/2 tsp chaat masala and 1/2 tsp salt.
  4. Further add 2 tablespoons of mint and 2 tablespoons of coriander.
  5. Now add 2 tbsp. corn flour and mix well; alternatively use poha powder or rice flour as it helps to absorb moisture.
  6. Mix well forming a soft dough.
  7. Grease hand with oil and prepare ball-sized tikki.
  8. Shallow fry in hot oil. You can alternatively roast or deep fry. 
  9. Roast on low flame until it turns golden brown.
  10. Flip over and cook on both sides.
  11. Finally, enjoy aloo tikki with green chutney, tamarind chutney or prepare aloo tikki chaat.
